i sure hope that's it (ootd)

I mentioned going to h&m over the weekend. I would like to show that I am superbly happy with at least part of my purchase: a new navy blue blazer!

Taking photos with a self-timer on my iPhone in front of the copier in the mailroom reminds me of my The Put Together Project days, back in January.  In any case, I love this blazer! It's kind of halfway in between a jacket and a blazer, as it's a little heavier and more jacket-esque than a blazer is typically, since it's lined, but made out of very heavy, stiff sweatshirt material. Wearing it around the office keeps me both warm and stylish. Or something like that. I'm still not convinced the outfit works, but I've been wearing my khakis entirely too much lately, so i needed to put on some different pants. Like my skinny cords. Yay!

Last night's dinner was nothing exciting -- we had chicken salad sandwiches when we got home, because we were both starving, and a baked yam and some sauteed turkey kielbasa about an hour and a half later. I went to bed at 10PM last night and I was still tired this morning when I got up at 7:15AM. I've come to the conclusion (again) that I am just not a morning person. Even after nine hours of sleep. It's a rough life.

promise not to stop when i say when

Last night's dinner was eeeeeexcellent. Salmon fillet with a little bit of teriyaki and a lot of brown sugar on top, baked at 300 for about 25/30 minutes over brown rice with some sauteed brussel sprouts mixed in. The brown sugar covered salmon was a big hit with Nate. He kept asking if there was more! Alas, only about a serving and a half each. Gotta stretch that $5 salmon fillet, you know!

I'm thinking I really need to get some new lighting for my food shots.

I didn't take pictures of my outfits for Monday or Tuesday. I did look nice, but I wasn't wearing anything that I hadn't worn before. Plus, I was kind of busy, so I let the picture taking slide. It happens.

I'm back to it today, because even though I've worn this outfit (in pieces) before, I added my skinny gray belt to my green (rabbit hair) sweater, to see how I liked it on me. I'm not super pleased, but I'm also not horrified at where it sits. I do think that the sweater needs to be longer to really pull off the skinny-belt-at-the-waist look, personally. I also think I need to get a shorter white tank, so there isn't a foot of tank top peeking out from under my shorter tops. Personally.

CARA Award nominations were announced yesterday, and I am so proud of the FSU groups! From my former group, All-Night Yahtzee's Dave Girtman was nominated for Best Mixed Collegiate Arrangement for 'You Found Me' by The Fray (go to the Yahtzee website to listen for a sample,) and the FSU AcaBelles were nominated for Best Female Collegiate Song and Best Female Collegiate Arrangement (by Kristina Rodriguez): Monster by Meg and Dia and Best Female Collegiate Solo: Alone by Heart (sung by Lauren Barreiro - check out her blog, Acalosophy!) Unfortunately, the AcaBelles don't have clips of the songs on their websites (psst, you should get on that!) but you can listen to Alone. For Monster, you'll just have to buy the album!

It's a beautiful day here in Seattle. Wish I was outside to enjoy it. Instead, I just stare sadly from the conference room window. (isn't the construction lovely?)

apple chips, pizza and WINNING!

I have a project today at work that won't take very long, but it involves a lot of hole punching. Good thing I have a brand new hole punch!

They kept saying this week was going to be nice, but it was kind of cloudy and gloom all week, and now it's supposed to rain all weekend. I've been trolling searching Craigslist this morning trying to find furniture -- namely, a dresser, desk and king-sized bed frame -- for relatively cheap. Because we don't have any of these things, and we decided that they were pretty much all we needed to complete our apartment, since we aren't going to be spending more than a couple years here. We don't really want anything that we'll fall in love with (I've already fallen entirely too in love with this oversized chair that we found for free on CL -- I'm having to tell myself we probably won't be able to bring it back to Boston with us, whenever we decide to go back there. Ooh, hoo hoo.) we just need furniture that works for now. For realsies.

Dinner last night was pizza. We contemplated delivery from the usual (aka Dominoes,) and Nate really wanted to get two feet of pizza from Pizza Hut, but instead we ordered from Mod Pizza on 6th Ave (about a ten minute walk from us.) We thought they delivered, but found out they didn't, so we picked up the pizza and ate there. It was SO GOOD. The pizzas are just enough for two people and only cost six bucks. We got mushrooms, onion, crumbled meatballs and cheese (asiago, parmesean and mozzarella) on ours. Plus, you can get an order of four garlic knots (or cinnamon knots, if you prefer) for a buck fifty. So we got a pizza and two orders of garlic knots...and ate everything. I was too full, but it was delicious. Totally worth the over eating.

I'm going to be kind of sad when I no longer have to take pictures of what I wear every day. TPTP only (technically) goes another week or so! Today is Friday, so jeans are a total go, but I did decide to wear one of my new tops I got at Express the other day when I got my sequiny scarf. I'm not much one for turtlenecks, but I couldn't resist the rouching on this baby:

We desperately need to go grocery shopping, because we have no proteins in the house. This is definitely the thing we run out of the fastest, because we don't buy anything frozen (especially since we found the $2, two pound chicken breast at our favorite market,) but it means we have to eat them pretty quickly, or they start to smell kinda funny. In truth, the chicken I made the sweet potato and onions with was already starting to smell kind of weird, and the fresh meats like that don't last for anything past a week from when we bought it. We have strong stomachs. I figure if it isn't completely rancid, we'll be fine. We gotta cook it all the way through, anyway.

Also, if you like WINNING things, head over to the fANNEtastic Food blog, where you can win a $50 shopping spree to iHerb.com (they have more than just herbs.) I like winning things, don't you? (Not to say I ever do win anything, but I still like it.)

Thinking about making Apple Chips with my new corer and Snow White apples tonight or tomorrow. I'm thinking baking them with cinnamon sugar or pumpkin pie spice will be super tasty. Got any suggestions for the best easiest apple chip recipes?

it's the day of the show, y'all

Really, if you've never seen Waiting for Guffman (and you've ever done any kind of theatre, especially community theatre, stop reading this post RIGHT NOW and go watch it. Seriously.

But for realsies, THE MORNINGSTAR VEGGIE CORNDOGS ARE BACK!!! I am a huge fan of this product (and a lot of other MorningStar products) despite the fact that I am not a vegetarian. Nor have I ever been a vegetarian. But when I was younger, I wasn't really a big meat fan. Now I've discovered that I like most meat, but certain things still have to be seasoned past the point of recognition marinated for me to find them palatable. This doesn't include corn dogs, but if there's a way that I can still enjoy a corn dog, have it fool me into tasting like a corn dog, and be vaguely more healthy for me than an actual corn dog, I am all for it. Their tomato basil burgers and breaded spinach-artichoke bites are also quite tasty. Go try them! Now.

Do it.

In other news, it's a snow emergency in Boston, and a balmy forty degrees and foggy here in Seattle. With all the snow they've been getting in the northeast, I go back and forth between loving that I'm not there to deal with it and hating that I'm not there to see all the snow. I am still a Florida kid at heart, and snow is exciting. I'm not sure how exciting it would be at this point in the game, though.

Feeling kind of fancy today. Love this bracelet that my aunt got me from LOFT, but it's systematically ripping all my armhair out of a small portion of my forearm. Ouch!

Sometimes, I feel just feel like listening to a cappella. And sometimes, I am overcome with an arrangement of a song. Or the soloist. Or how gelled it sounds. Like (Maroon 5's) Secret, covered by the Carolina Tar Heel Voices. I mean, could it get any sexier?

give me something to believe

Two thirty pm is usually the time of day when I start contemplating a second cup of coffee. To be fair, according to my coffee maker, eight ounces is a cup a coffee...so when I drink my ten ounces in the morning, it's more than a cup. So...I guess it would be my second and a half cup of coffee?

I've been reading a lot of foodie blogs, and it seems like nut butters are not that difficult to make. So I'm probably going to try that at some point in the not too distant future. Probably at least peanut and almond butter (if I can bring myself to stomach how much a giant vat of almonds costs,) and maybe some walnut butter? Do people even make walnut butter? Mayhaps I should do some research. It seems to me, however, than any nut with sufficient oils in it should make a butter. Of some sort. Right?

Dinner last night was just a bunch of veggies cooked together and thrown into tomato sauce and dumped on top of pasta, so it wasn't anything terribly exciting. But it sure is delicious! No matter how much I eat, I (usually) want pasta. It's easy, it tastes good. My mother used to warn my sister and I we would turn into noodles. Noo-dees. yeah, I know what that sounds like. We were little kids, ok?

Tonight, I think I'll roast the half chicken breast we have on top of some sweet potatoes and onions. We can eat half, and chop the rest up to make chicken salad with! Homemade chicken salad, with home-cooked chicken breast, seems so much more appealing than canned chicken. Not that I have anything against canned chicken, but making things from scratch has a certain delight about it. It just feels like you're eating better, even if you are still adding ridiculous amounts of mayo to the mixture.

In any case, here's TPTP for the last three days, including today. I really love the scarf that I got from Express on Friday...they had a black one, too. I'm contemplating going back for it. And maybe for some more tops. You know, ones that look exactly like the ones I bought already, just in different colors. I'm building up my work wardrobe. I'm gonna be a professional! Maybe.

Today, January 26th:

Nothing too exciting, but aside from not wearing any makeup yesterday, I'm feeling very work oriented. It's fancy.

Also, currently kind of obssesed with this song. Can't seem to find anywhere to download it (even if I'm willing to pay money.) It's a sad day. Sad, sad day.

Also....ALSO...see those little boxes? Underneath the post? You can click them. And then you can let me know if you think my posts are funny. Or interesting. Or just cool, just so I know you're reading. See? No awkward commentary necessary.

Yay!

larger than life

I took a small hiatus from writing things this weekend to actually hang out with people! This a very exciting development in my life here in Seattle.

Friday night, Nate and I went out to buy some things we'd been eyeing at Express, because they are having an extra 40% off clearance sale at the moment, and wound up get 6 items for about $70 (a major steal!) Then, we went to dinner at The Taphouse Grill. It's kind of in a touristy part of town, but they have, like, over 140 beers, plus really good food, so we decided to go back, instead of trying to find someplace new. When we got home, we watch The Grudge 2, which is possibly the worst movie I've ever seen. Ever. No really, it's horrible. We contemplated turning it off halfway through.

It was my best friend's birthday on Friday, so on Saturday, we made plans to go to the Science Center around noon. Well, we are all lazy bums, so I think I left my house to walk to her house around 11:30 (it's like a 40 minute walk,) and then when I got there, she was still cleaning and her roommate was still showering, so we didn't leave until after 12:30. Then, Nate wound up not having to work, so we had to wait for him to meet us at the Space Needle (which didn't take very long, it was pretty much perfect timing.) He also got some pretty cool pictures on the walk over.

Then, we sat and ate a little snack at the cafe after waiting in line to get in the Science Center complex. So I think we actually started looking at the exhibits around 1:30? Which turned out to be fine, because while the buildings themselves were very nice, the exhibits were kind of...outdated. I mean, they had a sign that said a fossil was 'something you dug up.' (This was then a running joke for the rest of the visit.) And they kept calling all the dinosaurs in the prehistoric section "weird," which kind of irks me, because OF COURSE they're weird, they're dinosaurs, but really, shouldn't you be teaching kids to be interested by "weird" things, and not just teaching them to call them "weird" because they're different?

In any case, some of the kids exhibits, about how things work, were very cool. They had a "shadow wall," where you stand in a dark room against a reflective wall and they have a really bright flash on an audible timer, so that after the flash goes off, you can see your "shadow" left on the wall. It was fun standing in crazy poses and see what the shadow looked like! I also always enjoy the sections where they show you how hard your heart works, how hard you have to pedal a bike to burn so many calories in an hour, etc. They had one test where you had to pitch match, and even in the crazy kid loudness of museum, I matched the tones almost perfectly. Yay for being a trained musician! The middle of the complex, which was all outdoors, was interesting, also. They had several structures that (we think) are just meant to be artistic, along with some water areas, some of which were interactive. We didn't get shoot anything with the water pistols though, because we are nice and don't shove little children out of the way...usually.

After we wore ourselves out walking around for a couple hours, we went back and had a nice dinner, cheesecake and ice cream for dessert, and watched some Mystery Science Theatre 3000. I was so tired from walking and not eating enough (or probably drinking enough water,) that I went to bed at 10:30/11:00 and slept through all the way until 10am the next morning (at which point I not longer felt like I was getting sick, so I really think it was just the no water thing.)

Sunday, the boy and I went grocery shopping (which kind of turned into wandering around Target,) but first we stopped at IHOP for delicious breakfast. Our usual: a spinach and mushroom omelette (the real version, not the simple and fit version) with strawberry banana pancakes, hashbrowns and four strips of bacon. We downed it in about 10 minutes (we may have gotten up at 10, and waited until 1:30 to eat, so we were kind of hungry.) We figured it out, and the whole meal was about 2000 calories. So we figured that was breakfast and lunch, so we didn't feel so bad about demolishing 1000 calories each in such a short amount of time.

After Target, we wound up at Forever21, Express and Payless looking for a new all-purpose purse for me. My red one, from H&M, is starting to finally just fall completely apart, so it's really probably time for a new one. Unfortunately, everything that is out right now is kind of boring, and either black, tan or beige. I found an ok purple one at Payless, but I like to really love my bags, especially since I tend to only carry one all the time. So I may have to wait until Spring lines come out for some brighter colors. While we were at Payless, my trusty sneakers finally bit the dust. I was taking them off to try on a pair of boots, and the shoe completely separated from the sole. Sad day.

Sunday night was full of laundry and me whining because I was so. very. tired (which was apparently just hunger, even though I consumed 1000 calories earlier that day.) This morning, I took some time and participated in TPTP, which I ignored on Friday, because I'm a bum.

This green sweater has rabbit HAIR in it. Not fur, hair.

It kind skeeves me out, but I really like the sweater. And the color. And it was on clearance for $10, so I guess I'll deal.

slacking

So, I'm slacking on posting outfits for TPTP...but only because it's been easier and easier to feel put together without actually trying. I'm making sure I go for the jewelry box in the morning, and actually thinking about what I want to wear the night before, instead of just grabbing the first thing I see that would work. It's kind of nice, actually, being less worried about looking presentable. Anyway, here is yesterday and today:

Yesterday, January 19th

Today, January 20th

I particularly love today's necklace, and I'm excited to finally wear my tights! I got this pair and a navy pair at Express from their box sale for $6. It was kind of awesome.

We managed to finally go grocery shopping last night, so now I'm trying to meal plan. If you have any kick-ass recipes for any of the following ingredients, let me know!
  • salmon
  • chicken breast
  • spaghetti squash
  • sweet potato
  • brussel sprouts
  • green beans
  • button mushrooms (pre-chopped)
  • red potatoes
  • acorn squash
  • celery
  • carrots (big and baby)
  • onions (yellow)
  • tomatos
Last night's dinner was simple, but delicious. Salmon and green beans! Probably two of my most favorite foods in the WHOLE wide world.

Ugggggh, so delicious. We also found the kind of apple corer I was looking for (the kind that only takes the core, and doesn't also cut the apple into slices,) so I bought these RIDIC red apples to make apple chips with! I've taken to calling them Snow White Apples, but I think they're actually Roma Red or something. They smelled sweet, but not too sweet, so I'm really excited to try them out. I haven't had apples in a long, long time.

(Ok, so yes there's a filter on the pic, but they really are that red. We have horrible lighting in the kitchen, so I wanted to make sure you got the entire effect of the crazy color!)

in hotel rooms

Ok, so this company called OnTrac (package delivery, like UPS or FedEx...or DHL?) delivered my no-clip curling iron from Amazon today. They tried to deliver it yesterday, but couldn't get in the building. I gave them Nate's phone number, because he was supposed to be home today, but he wound up having to go to work. I forgot to call them this morning, and by the time I got to it, they had already "delivered" the package. It says online they delivered it to the front door. Front door? Of the building? Because that's outside, and totally unacceptable. Hopefully they mean the delivered it to the outside of our apartment door. Because that's inside and acceptable. I have to wait until I can get home to find out. Ugh.

As for the curling iron, I'm very excited to try it. I've read mixed reviews about this type of iron, but honestly, it seems easier for me than the clippy kind, mainly because my hair tends to kink up when I try to curl it with a regular curling iron. So...I'm trying it out. I'll let you know how it goes.

I added my Twitter feed and my Flickr photostream to my blog, so now I can keep track of myself at all times. Fun! Or...I think it's fun.

Trying to decide on dinner tonight, because we still haven't managed to go pick up meats of any kind. I'm almost thinking a sweet potato and white bean fritter kind of deal. Because we don't have much left to choose from.

Feeling classy today with my TPTP outfit. Also need to do laundry, but that's beside the point.

collect myself from the ground

The weekend is never ever long enough. Ever.

Nate also pointed out that I didn't post my TPTP for Friday, so I'll post that and today's outfit now:

Friday, January 14th

 Today!

Despite disliking the way my bangs look when I attempt to squash them back again the rest of my hair, I'm actually not feeling too shabby today. Last night the wind was whistling something FIERCE between the buildings outside our apartment windows, and I was fearing for my walk to work this morning (because my company doesn't recognize MLK Jr. day as a holiday,) but it actually wasn't all that windy this morning. And it wasn't raining! Win/win situation.

Dinner last night was easy: Teriyaki Chicken, Onion and Broccoli Stir Fry over couscous. I made a little too much couscous, but I have a big lunch (which I'm excited for!) and there's some left over for Nate to have with lunch, if he so chooses. If he doesn't, then I'll probably just throw it in a skillet and fry it up with some fresh veggies for tonight's dinner, since we are currently out of proteins.

Nate has to work from 8PM to 1AM tonight, which makes me a very unhappy puppy. It will be the first time that I've gone to bed without him since we moved to Seattle. I tend to freak myself out a little too easily a night, but I'll just blast Food Network in the evening, and then put my happy self to bed with some music on,. The noise should be enough to distract my brain from being a creepster.

I'm going to buy all the Christmas gifts I wasn't able to buy over Christmas this week. We actually have the money to do so and send them off in a timely fashion, so that's exciting. Only, the things I wanted to get for my Dad are still backordered for 1-3 weeks. Phooey!

so much like me

Oh yeah, I am vaguely dressed up, but not really matching today. See evidence below:

You see the accessories and you think, 'well those all go together.' But then you see the outfit...

and you say, 'Hmm...definitely could be less spastic.'

That's how I feel about today, anyway. Got up kind of late, rushed around, didn't get to putting on makeup. Not to mention, it's raining ALL DAY for the next NINE DAYS and that makes me SAD. Where did the snow go? On top of the rain, they are pile driving the SHCNOZBERRIES out of the pylons outside, and have been since I got here this morning. And will be until the beginning of February. Which really unsettles me. The whole building is methodically vibrating, and let me tell you, it is not doing anything for my inner calm. The low down is basically as follows:

The highway that runs outside of the building is kind of old, moss-covered and decrepit. Ok, ok, so it needs to be replace, I get it. Here's the thing, though...they're planning on tunneling underneath it. To help the congestion that occurs when people use the highway to get from point A to point B (or vice verse) for the workday. But if they started tunneling without building a new ramp, the off-ramp that exists now would crumble and everyone would die. And no, that's not an exaggeration. So they have to 1. build a new off ramp so that they can 2. demolish the old off-ramp so that they can 3. tunnel underneath the existing structure and 4. use that instead of the existing highway. WHAT?

it don't break even

So, I find this letter I received from a major beverage company kind of funny and also kind of eye-opening. I applied for a position as a Receptionist at their corporate headquarters right when we got to Seattle (maybe before, when we were still squatting in Nate's sister's apartment in Sacramento, CA.)

January 12, 2011

Caitlin O. Nelson
(My Permanent Address,
which was still in NH at the time)

Dear Caitlin:

We have received your application for the position of Receptionist/Administrative Assistant. After careful consideration, we regret to inform you that you have not been selected for this position.

We will retain your candidate file in our database and may inform you of job openings that match your profile if you selected this option. We also invite you to visit the Career Section on our Web site regularly.
We thank you for your interest in (Name) Beverages Company and wish you all the best in your career.

Best regards,
Human Resources Department
(Name) Beverages Company

If I recall correctly, the job description wasn't anything fancy: answer phones, distribute mail, hand out badges for guests coming into the headquarters. Pretty much the exact same thing I do now. I find this letter kind of funny, because the company I'm working for contacted ME for an interview. They found my resume on CareerBuilder and wanted me to come in. As opposed to this company, which did not contact me for an interview, or contact me at all, until almost four months later, to tell me I didn't get the position. Ya think?

In any case, it also got me thinking about what we would have done if Freeman hadn't contacted me. I did receive another job offer before this one, for a part-time administrative assistant/reception relief position in a building pretty much equidistant, in the opposite direction, but the company, unfortunately, never got the go-ahead from their headquarters to hire me for the position. It worked out better, because I was looking for a full-time position, but I was thinking that I could "get my foot in the door" with these people, and hopefully they'd decide they had a job for me later on down the line. In any case, I was told I had a job with them on October 8, 2010 (which was, I want to say, about two weeks after my interview,) and told them I had received a job with Freeman on October 22, 2010, a full two weeks later. At this point, they still had not received the approval from their headquarters to do the hiring, so I had continued to go on interviews (because I couldn't wait around,) including retail positions for the holidays. It was all a crazy, big mess. So, it ended up that I had the part-time administrative assistant job offer, a part-time, seasonal retail job offer and my full-time job offer contending all at the same time. Obviously we know which one I chose.

The point of all this is that I am our financial security. I make enough to pay for our apartment and basic necessities, so Nate's pay winds up becoming spending (or soon, savings,) for us to do with what we please. But if Freeman hadn't contacted me? We might not be in Seattle anymore. We wouldn't have been able to afford our apartment. We would have had to at least go back to California and mooch off of Nate's sister's hospitality for a while, until we could find jobs there. Or we might have had to beg money from our parents to make it back across the US as quickly as possible to live in Tallahassee (where I always have a job, and I'm sure Nate could have, also,) Charleston (where my Mom isn't even LIVING anymore,) or Franklin, where we have a room set up for us to stay in whenever we'd like, and try to find a job in NH or MA (Nate could have had a job in Burlington, in probably one of two locations, at least for a while, but those would be kind of an extreme commute from his parent's house. As would my job, which I probably could have had back, if I'd asked really nicely, at MiniLuxe.) What a FAILURE that would have been. Broke and right back where we started. It's kind of terrifying to think about, and makes me consider myself extremely lucky.

Enough bad stuff. Nate made biscuit dough yesterday (which turned out AWESOME -- we have his Mom's recipe to thank for that,) so that I could make chicken 'n dumplins for dinner. This is a recipe I've made before, that I found in Southern Living, which normally calls for pre-cooked chicken, a can of cream of chicken soup and a can of chicken broth, which you heat, add carrots, celery and Pillsbury Grands biscuit dough to, and wahlah! Chicken 'n dumplins. Delicious. I discovered however, when I went to make it last night, that I didn't have chicken broth OR cream of chicken soup. So, here's what I wound up doing. It turned out superbly, just ask Nate.

Chicken 'n Dumplins with Cheesy Biscuit Breadsticks (this amount of food fed the two of us, with a little bit left over for lunch for me today. And we may have eaten too many breadsticks in one sitting.)

Ingredients:
1.5 tablespoons flour
1.5 tablespoons butter/margarine (we always use margarine, but butter is perfectly acceptable)
1.5 cups of milk
1 cup of water (or maybe 1.5 cups...I didn't actually measure the excess water I added. Really you just want enough water added to the base to cover all the things cooking in the pot)
1 stalk of celery, diced
1 medium carrot, diced
Some white mushrooms, coarsely chopped (maybe 4 or 5, depending on size? We get ours pre-chopped, because I'm lazy and because it's the same price for a pound chopped as a pound whole at the market we go to.)
1/3 bag frozen corn (I'm sure you could use fresh corn, or canned corn, too.)
~1lb chicken breast (we had about a 2lb whole chicken breast, which I cut in half and tried to get rid of as much fat as possible from)
Half a batch of plain biscuit mix (but make a whole batch, cause you'll need the rest for cheesy biscuit breadsticks!)
Rosemary
Marjoram
Thyme
Oregano
(you can also just skip these four spices and use poultry seasoning instead, which also has ginger and sage in it. We didn't have poultry seasoning, ginger or sage, so those are the four herbs I used. Mine were dried.)
Salt
Pepper (if you like. I don't.)
Garlic (if you feel like it. I have a Garlic spray that I bought at a winery in the El Dorado Hills in CA. I use when I want just a hint of garlicky tastes. Or when I don't feel like chopping garlic.)

Directions:
1) Have you boyfriend/sibling/parent//friend/child/spouse/dog find a plain jane biscuit recipe and make it. Then have them cut it into strips. Ours varied in size from 1" to, like, 3". Don't worry too much about it.
2) Preheat the oven to 450.
Meanwhile....
3) Start your roux base with the butter and flour (easy roux recipe here. But basically, just put the flour and butter in the bottom of your saucepan over medium-ish heat until they're fully combined and look kinda weird and lumpy.)
4) Pour in the milk on top of the roux base. Stir it some, while you bring it to a boil, then reduce to medium-ish heat so it's not quite simmering. (here's a recipe for a cream sauce, if you need it. Though, I don't usually put "vegetable water" in mine, whatever that is.)
5) After the cream base is started, cut your chicken into medallions (or cubes...or, don't cut it at all) and cook over medium-ish heat. At this point, I seasoned my chicken liberally with aforementioned spices. Like, just dumped a whole bunch on either side. Most of it will come off and get cooked down into the liquid base, so you probably don't need to worry too much about over-spicing. Unless you're a crazy spicer. But I'm pretty crazy about spicing, so you'd have to be way crazier than me. My chicken was coated with spice on either side.
6) While chicken is cooking (and you're flipping it, and occasionally stirring your cream sauce, to make sure the roux base is integrated and you aren't burning the milk,) chop up your carrots and celery (and mushrooms.)
7) Once the chicken is fully cooked, chop it finely/shred it with your knife until it's in smaller, bite-sized pieces. At this point, the cream sauce should be mostly lump-less, but shouldn't have thickened too much (if you need to turn it down to low while you fix the chicken, this is perfectly acceptable. It isn't going anywhere.)
8) Put chopped chicken, celery, carrots, frozen corn (if you're using fresh corn or canned corn, you probably can wait to put it in with the mushrooms,) along with about half the biscuit strips into the roux base. Add enough water to cover everything in the pot (you don't need to drown it, just mostly cover everything,) and turn the heat up to medium-ish. Just enough to simmer the pot.
9) Salt liberally (i.e.: salt to taste.) I tend to be light-handed when it comes to salt, but if you're heavy handed, you might want to skip salting the chicken and just salt the liquid base. Then you can taste it and make sure you aren't over-salting.
8) While the pot is coming to a simmer, saute mushrooms in butter or olive oil or medium-high heat until they're nice and brown and delicious looking. Once they're done, and the pot has come to a simmer, add them (and fresh or canned corn, if you're using it,) to the pot. Stir everything, put the top on and let it simmer for 15-20 minutes, continuing to stir occasionally. This will be enough time to thicken the base, cook the raw veggies, and warm everything up to the same temp. Done and done.
9) Once you've set your chicken 'n dumplins to simmering, have your helper (see first instruction for acceptable people,) hand roll out the rest of the strips to your preferred length. Take two and twist them around each other to make twisty breadsticks. Add A LOT of cheese (or less cheese, if you are not a cheese fanatic,) to the tops and bake on an ungreased cookie sheet for 10-12 minutes.

Everything should be ready about the same time! Breadsticks are cheesy and delicious, and chicken 'n dumplins are hot and thick and everyone is happy. Serve and enjoy.

Besides the chopping, this recipe as super easy. Even substituting fresh ingredients, spicing everything and making the base myself, it didn't take more than half an hour to make everything. Especially with the boyfriend helping out with the biscuit part! Turned out ok, I'd say:

As for TPTP, today it is NASTY outside, and I still managed to look vaguely put together. It snowed, then rained last night, so I was hoping for a snow day (like all the Easter Coast-ers are getting today,) but alas, the roads were not icy and frozen, so I was stuck going to work. In any case, I wore more casual cords (and actually brought at extra pair of pants, just in case,) because the last time I tried to walk to work in wind and rain, not only did my umbrella break, but I was soaked from the waist down before I even got 100 feet out the door. It wasn't that bad today,  thankfully, but it was pretty slippery, with all the water, snow and ice on the ground, so going down the hill to get to work was more like skiing than anything else.

It's been sadly slow at work, so I've spent a lot of time favoriting things on Etsy and ModCloth, deciding what I want to spend all my money on (when I have money again.) Love these:

what is it that you remember

First things first: I want an iPad.

There, I said it. I thought I didn't. I thought, 'you know, they're really cool, but I don't really have a need for it.' So. Very. Wrong. And here's why:

1. Cooking. We move around a lot, so cookbooks aren't really practical, and as nice as it is to be able to look up recipes on my phone or computer, I don't like to put my computer near the kitchen when I'm cooking (cause let's face it, I get a little messy. (Nathan will laugh at the "little" part of that statement.)) In the case of my phone, the little writing is so itty bitty that I can hardly read it anymore (obv I am BLIND,) and you wind up wiping off your hands every two seconds so you don't get your phone screen all slimy from moving it down to the next direction. The iPad is big enough that I would be able to 1) put it far enough away from me to not splatter it and still be able to read the text, 2) which means that I can fit several instructions on the screen before I have to wipe off my hands and swipe to the next page and 3) has some really cool-looking apps for making food that actually has pictures of what each ingredient and step is supposed to look like. (as an aside: this is one of my biggest pet peeve with cookbooks. I am not a trained chef, so when I don't know what a particular instruction means, I go to the glossary. Well, there are no pictures in the glossary, so then I have to look up the technique online. At this point, I've wasted 10 minutes when I should already be done mixing. It's a travesty.)

2. Music. I mostly hate turning pages, holding my folder to read out of...pretty much anything that has to do for sheet music. I have no attachment to music books/pages like I do to books and their pages. Plus, I don't read music for hours on end (or...I don't anymore, since I've graduated. This might not be true for people who sing/play more often than I do.) If I could have my piano and/or vocal music on the screen, I can swipe to the next page. It can't get stuck together or fall backwards because I haven't quite snapped the spine in two from years and years of use. Y'all know what I'm talking about. Or if I could actually use it to arrange/write on Finale...like, if they had a touch-screen application where you can just drop and drag the notes around with your fingers? Ooooohhhh, the applications. I'm wiggling with anticipation.

Now, in addition to these two very important aspects of my life, I would probably use it for reading, even though I wouldn't want to. I love my kindle. LOVE. It's so much better to carry around than books, but my favorite thing about it is that it is NOT a mini-computer. When I have it out, I'm not tempted to go surf the web or play around on facebook. It is simple another method to get books into my brain. Plus, it's got the cool magnetic technology that isn't hard on your eyes, like computer screens are. These are the reasons I purchase my Kindle, instead of one of the other eReaders on the market. One thing I am not terribly in love with, however, is the book searching user interface on the device itself. Searching on Amazon for texts isn't bad, but on the Kindle itself, it turns out to be more of a hassle than anything else, so I wind up just reading what I have or going off to do something else (especially if I'm near a computer. True story.) So iBooks? A freakin' godsend. If could have iBooks on my Kindle (plus that awesome little bookshelf user interface,) I would be one happy camper.

So there it is folks. I have a need for an iPad. Or, justifications for my WANT of an iPad. Smiley face.

Also, I downloaded FotoTimer Lite for my iPhone today and now I can take full-body pics so much more easily. I kept meaning to look for an app like this, but never got around to it. It is awesome.

TPTP for today: Express Teal Sweater (a different one...yes, I have two of basically the same thing, so sue me,) Kahkis, Black Flats w/ Zipper Detailing and Long, Gold Twin Leaf Necklace. And it's definitely a ponytail day...because it was so hard to get out of bed this morning.

They threatened lots of snow for this afternoon/evening. Like, snow that stays on the ground. I'm excited!

nothing else compares

Not much has happened today. It snowed a little bit this morning(!) as I was walking to work, and even though the forecast said sunny, it's been snowing off and on all day. Nothing is sticking to the ground, but we're supposed to get more in the next couple days. Wheee!

In lieu of actually writing real things, I'll just post my pics for TPTP today.

Tada! Pretty put together, no? I even had time to do a full face this morning, instead of just eyes, and my hair did an acceptable curly thing last night while I slept, instead of the stupid curling thing it normally does. I'm fancy, huh?

kivinen tie

Ok, so I don't really like football, but the Seahawks just ran a 67 yard touchdown against the Saints. This game is a little ridic.

In any case, I've made the same thing for the past two nights for dinner, but I feel like I have an excuse because a) we only did half the grocery shopping today and b) I only had about 15 minutes to slap something together so Nate could eat before he went to work this evening.

The half of the grocery shopping we did was to the Asian grocery store (Uwojimaya, or some craziness like that,) is the part of the shopping that always makes me feel grateful that we live in this part of town. We got:

-one acorn squash
-one spaghetti squash
-three large yellow onions
-shallots
-garlic
-bananas
-brussel sprouts
-two sweet potatoes
-three purple potatoes
-one pound of pre-sliced white mushrooms
-fresh basil
and probably something else I'm forgetting FOR $20.

And then we went to our favorite little tiny Asian market down the street, because they have really cheap  meats, and discovered they have whole chicken breasts for $3.50. We didn't buy them today, because their salmon shipment hadn't come in for the day, so we're going back tomorrow, because you have to spend at least $5 to use a card of any kind. WIN!

I also was fairly decent looking today, even though we were only leaving the house for about 45 minutes. I even straightened my bangs, to make them look a little more socially acceptable. Be impressed!

Today's outfit consists of:
-off-brand Coral T-Shirt with Rockstar Design on the front (because, you know, I'm 14)
-Express Zelda Grey Skinnies. These things are the best, especially because they are SUPER blinged out and make me feel fancy. Express calls them jeggings, but they aren't really. They're more just really skinny jeans, not leggings mean to look like jeans. And because I refuse to say I own jeggings. I mean, really.
-Express Black, White & Metallic Silver Circle Scarf
-Chucks, black with light blue detail
-Forever 21 Grey Quilted Jacket with furry hood

Nothing too fancy, but I at least feel like I tried before I left the house.

Nate is at work this evening, so I'm by my lonesome. I'll probably play some Wii in a little bit, but for now, I'm hanging out on the couch listening to music and poking around in the new Mac App store.

that's not my name

Alright, so I found this little gem of an idea when I was going through Google Reader's suggestions for me, and it's something that I was going to do for myself anyway, because I am always jealous of people who are always so put together.

Tada! The Put Together Project. For me, this mostly means getting up earlier than I want to, because while it has been fairly easy to pick out clothes the night before (seeing as I don't really have that many to choose from, especially for work,) my hardest thing is doing something other than putting my hair in a pony-tail in the morning and slapping on some mascara. And sometimes I skip the mascara because, let's face it, I sit and talk to people online all day due to the fact that we don't really have clients that come into the office. So...yeah. I'm a lazy bum.

Anywho, I'll post the pics I take here, as well as in the Flickr group, and we'll see how it goes!

Today's outfit consists of dark teal v-neck sweater from Express w/ extra long white tank from Wet Seal underneath, dark stretch jeans from Gap and the most comfortable flats I have ever owned from Target. I even convinced my friend Zoe to buy these, and I think she owns two pairs now (but not the zebra ones, like mine.) Also, you can't see it in the photos, but I do have on my diamond and white gold heart necklace from Kay Jewelers (present from the BF,) and two silver rings. I feel like the jewelry makes up for the lack of make-up today...which is in my bag, I just never got around to putting it on!

p.s. From now on, I'll try to take pics with Photo Booth on my Macbook, so they'll be better and you can actually see the clothes.
